Being in the Pacific Northwest and also having participated at a kitchen incubator program in which 70% of the ingredients needed to be locally sourced, made me more aware of the importance of using local ingredients when handcrafting from scratch these pastries. The secret to the pastéis de nata unique flavor lies in the harmonious blend of ingredients. By sourcing flour, eggs and milk from local farms and markets, allows me to create pastéis that are not only delicious but also environmentally friendly. And I cannot tell you the joy I have in concocting seasonal flavors by using, for example, apples from Okanagon Producers Marketing Association or berries from Sidhu Farms or even kiwi berries from a small farm like The Broken Shovel.
